As a mother of two, finding the time to cook a homemade meal sometimes feels like the most impossible task in the world. Whenever I am tempted by frozen dinners or take-out meals, I try to go through a mental list of my favorite quick and easy recipes instead. Quick and easy recipes, in my definition, use readily available ingredients lying around the pantry (nothing too exotic), require little effort, and, most importantly, taste amazing.
If the recipe surpasses those hurdles--and manages to be somewhat healthy, then I definitely know that it's a keeper.
